Ingredients

  • 8 oz fresh salmon, cut into bite-sized cubes (sushi-grade if raw, or lightly seared)
  • 2 Fuji apples, thinly sliced
  • 4 cups mixed salad greens (arugula, baby spinach, or spring mix)
  • ½ red onion, thinly sliced
  • ¼ cup toasted walnuts or almonds
  • Some cheese
  • Dressing: 3 tbsp rice vinegar, 1 tbsp soy sauce, 1 tbsp olive oil, 1 tsp honey, wasabi paste

Directions

  1. Prepare the dressing by whisking vinegar, soy sauce, olive oil, honey, salt, and pepper.
  2. In a large bowl, combine salad greens, apple slices, onion, and nuts.
  3. Add the salmon cubes (raw or lightly seared).
  4. Drizzle with dressing, toss gently, and serve immediately.
