Ingredients
- 8 oz fresh salmon, cut into bite-sized cubes (sushi-grade if raw, or lightly seared)
- 2 Fuji apples, thinly sliced
- 4 cups mixed salad greens (arugula, baby spinach, or spring mix)
- ½ red onion, thinly sliced
- ¼ cup toasted walnuts or almonds
- Some cheese
- Dressing: 3 tbsp rice vinegar, 1 tbsp soy sauce, 1 tbsp olive oil, 1 tsp honey, wasabi paste
Directions
- Prepare the dressing by whisking vinegar, soy sauce, olive oil, honey, salt, and pepper.
- In a large bowl, combine salad greens, apple slices, onion, and nuts.
- Add the salmon cubes (raw or lightly seared).
- Drizzle with dressing, toss gently, and serve immediately.
