Ingredients
- 12 oz udon noodles (fresh or frozen)
- 1 lb pork shoulder or pork chops, thinly sliced
- 1 tbsp soy sauce
- 1 tbsp sake (or mirin)
- 1 tsp sugar
- 1 tsp sesame oil
- Sauce: 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp sesame oil, 1–2 tsp wasabi pepper (adjust heat), ½ tsp sugar
- Garnish: sliced scallions, sesame seeds
Directions
- Marinate pork slices with soy sauce, sake, sugar, and sesame oil for 10 minutes.
- Grill or pan-sear pork until golden and cooked through.
- Cook udon noodles according to package directions; drain and set aside.
- Whisk together soy sauce, rice vinegar, sesame oil, wasabi pepper paste, and sugar to make the sauce.
- Toss noodles with sauce, top with grilled pork, garnish with scallions and sesame seeds.
