Ingredients

  • 12 oz udon noodles (fresh or frozen)
  • 1 lb pork shoulder or pork chops, thinly sliced
  • 1 tbsp soy sauce
  • 1 tbsp sake (or mirin)
  • 1 tsp sugar
  • 1 tsp sesame oil
  • Sauce: 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp sesame oil, 1–2 tsp wasabi pepper (adjust heat), ½ tsp sugar
  • Garnish: sliced scallions, sesame seeds

Directions

  1. Marinate pork slices with soy sauce, sake, sugar, and sesame oil for 10 minutes.
  2. Grill or pan-sear pork until golden and cooked through.
  3. Cook udon noodles according to package directions; drain and set aside.
  4. Whisk together soy sauce, rice vinegar, sesame oil, wasabi pepper paste, and sugar to make the sauce.
  5. Toss noodles with sauce, top with grilled pork, garnish with scallions and sesame seeds.
