Ingredients
- 3 lb (about 1.36 kg) of potatoes, peeled and chopped into ~1-inch pieces
- ½ cup evaporated milk
- ½ cup butter
- 1 tablespoon wasabi sauce (or paste of similar heat)
- Salt to taste
Directions
- Place the potato pieces in a large pot, cover with cold salted water, and bring to a boil. Cook until the potatoes are fork-tender—around 20 minutes.
- Drain the potatoes, then return them to the pot. Mash them until mostly smooth.
- Stir in the evaporated milk and butter until the mixture is light and creamy.
- Mix in the wasabi sauce to taste, adding salt as needed.
- Keep warm until serving.
