Ingredients

  • 3 lb (about 1.36 kg) of potatoes, peeled and chopped into ~1-inch pieces
  • ½ cup evaporated milk
  • ½ cup butter
  • 1 tablespoon wasabi sauce (or paste of similar heat)
  • Salt to taste

Directions

  1. Place the potato pieces in a large pot, cover with cold salted water, and bring to a boil. Cook until the potatoes are fork-tender—around 20 minutes.
  2. Drain the potatoes, then return them to the pot. Mash them until mostly smooth.
  3. Stir in the evaporated milk and butter until the mixture is light and creamy.
  4. Mix in the wasabi sauce to taste, adding salt as needed.
  5. Keep warm until serving.
