All four are dry blends made for high, dry heat, which is exactly where wet marinades fail in an air fryer. YOU YI CUN makes them from peel left over from Madou's citrus harvest, so this is an upcycling program rather than a flavour gimmick.

How do you use dry seasoning in an air fryer?
- Pat the food completely dry. Moisture is what stops a caramel crust from forming.
- Toss or spray with about 1 tsp of neutral oil per 300 g — the oil is what makes powder stick.

Season the Caramel BBQ before cooking (about 1 tbsp per 500 g). It needs heat to caramelise, and that is the whole point of the blend.

Season the pepper salt, shichimi and citrus powder after cooking. Their citrus oils are volatile and burn off under prolonged heat.

Frequently asked questions
Is this Japanese yuzu?
Not quite, and the difference is worth knowing. All four blends are built on Madou pomelo (文旦柚) grown in Tainan, Taiwan — a citrus in the same family as Japanese yuzu (Citrus junos) and used in exactly the same way, where the fragrant, faintly bitter peel does the work. Taiwanese yuzu peel is rounder and more floral, with less of Japanese yuzu's sharp acidic edge. If you like yuzu kosho or yuzu shichimi, this is the Taiwanese counterpart.
Which blend should I start with?
The Caramel BBQ. It is the most versatile of the four and gives the biggest visible payoff — a glossy, golden-brown crust on wings or potato wedges in one cook.
Are any of these spicy?
Not really. The Caramel BBQ is sweet with paprika warmth, the pepper salt and shichimi carry mild pepper and chili notes, and the citrus powder has no heat at all. None are chili-hot.
Do they only work in an air fryer?
No. All four work in an oven, on a grill, in a wok, or straight from the shaker at the table. The set is named for the air fryer because dry high-heat blends are what that appliance actually needs.
